This traditional Taiwanese dish is simple, delicious and a perfect dish to accompany with rice!
Method:
1. Cut pork belly into small pieces
2. Put into frying pan without oil, fry for 5-10 minutes.
3. When there’s meat broth, drain away the broth to reduce bad smell of the dish.
4. Continue to fry the pork for another 5 minutes until your can see the oil is coming out and the pork smell well.
5. The pork become a bit golden on surface. Then put some crispy fried shallot (or garlic) and brown sugar, fry together for 1-2 minutes.
Then add the brine sauce and cook for 15minutes with small to medium heat.
6. Turn off the heat and leave it for 1-3 hours.
7. Before serving, reheat it with medium heat.
The brine sauce I use can be braised with different food like boiled eggs, chicken wings, tofu, beef etc.
Method of making the brine sauce: water 700ml, soybean sauce 8 tbs, dark soybean sauce 3 tbs, 50g mixed spices or 1-2 tsp five spices powder, 20g rock sugar, add together and boil for 30 minutes.
The brine can be reused for few times. Filter the residue and put into a glass container then put into the fridge. You can use it to make another dish next time. But don’t keep it too long!
