方法：
1.豚バラ肉を細かく切る

4.油が出てきて豚肉のにおいがよくなるまで、さらに5分間豚肉を炒めます。
5.豚肉は表面が少し金色になります。次に、カリカリに揚げたエシャロット（またはニンニク）と黒砂糖を入れ、1〜2分間一緒に炒めます。
次に塩水ソースを加え、弱火から中火で15分煮ます。
6.火を止め、1〜3時間放置します。

私が使っている塩水ソースは、ゆで卵、手羽先、豆腐、牛肉など、さまざまな食べ物で煮込むことができます。
ブラインソースの作り方：水700ml、大豆ソース大さじ8、濃い醤油大さじ3、混合スパイス50gまたはスパイスパウダー大さじ1〜2、岩糖20gを加えて30分煮ます。
ブラインは数回再利用できます。残留物をろ過し、ガラス容器に入れてから冷蔵庫に入れます。次回は別の料理に使えます。ただし、長すぎないでください。
